All About Fruit

With Jackson now being a connoisseur of all things finger food fruit is now a major staple of all of our diets. It's true what they say, you (the parent) end up eating a lot of your meals off your little one's plate . . . I'm in BIG trouble when it comes chicken nugget/PB & J time . . . which means I've found a new love for fruit. Always been a veggie lover, but fruit I could take it or leave it. Now fruit actually is a go-to snack food (mom would be so proud).

So in honor of fruit & my professional little eater I thought I'd share a few yummy recipes with you that I love, found on kitchn.com. . . if you're not already familiar with this site, get familiar & it will keep you eating well for many seasons to come.

First off peaches . . . because who (including Jackson) doesn't love a good peach?

Next stop, the blueberry fields.

Honeyed blueberry frozen yogurt . . . the perfect after dinner treat on hot nights.


Mini blueberry lemon muffins . . . because everything is better with a little lemon.


Lastly, I have to finish up with some cucumber cocktail recipes, no cucumber are not fruit, but they are summery and I'm sort of obsessed with them - not in a single white female sorta way, but in a pregnant lady needs her ice cream sorta way, and I LOVE them in cocktails. During our recent trip to Sanoma I had the "Thomas Keller of Cocktails", Scott Beattie, make me a Cucumber Basil Gimlet and I have to say it was some of the best sippin' of my life. Cucumbers are so clean, refreshing, and honestly look so pretty in a glass, it's no wonder that they're a new staple on master mixologists' menus. Here's some visual inspiration.
